Basmati
rice – 1 ½ cup
Onions
– 2 (sliced)
Tomato
– 1 (big)
Carrots
– ¼ cup
Green
peas – ¼ cup
Corn
– ¼ cup
Beans
– ¼ cup
Capsicum
– ½
Garlic
pods – 3 (crushed)
Turmeric
powder – ¼ tsp
Olive
Oil – 3 tbsp
Salt
– to taste

Soak the rice in 30 minutes and drain the water completely.

Cook carrot, beans, green peas and corn.
3.
Remove the skin of the tomato and blend it well.
4.
In a large saucepan, heat the oil and fry the rice until golden brown, then add
little salt and 3 cups of water and cook the rice.
5.
Heat olive oil in another pan and add onion, garlic and capsicum and saute well.
6.
Then add turmeric powder, cooked vegetables and the tomato paste, salt and cook
for 2-3 minutes.
7.
Add the cooked rice into it and simmer for few minutes.
