Orange

rice – 1 cup
Pepper
powder – 1 tsp
Carrot
– 1 no. (grated)
Onion
– 1
Green
chilli – 1 no.
Salt
– to taste
Ghee
– 1 tbsp
Cash
nut, raisins, coriander leaves – for garnishing

Soak rice for ½ hour.

Remove the zest from orange and slice into small pieces.
3.
Squeeze the orange.
4.
Cook rice with 1 cup water, orange juice and salt.
5. Cover and cook until liquid is absorbed.

Heat another pan and add ghee, onion and green chili.

Cook until the onions are translucent.
8.
Then add carrot and cook for three minutes.
9.
Add the zest of the orange, pepper power and salt and cook for a couple of
minutes.

Then add this into the cooked rice.
11.
Mix well and cook for a minutes. Close the lid for 3- 4 minutes.
12. Garnish with cash nut and raisins, and coriander leaves.
