Basmati
rice – 1 cup Hot water – 2 ½ cup
Cinnamon
stick - 2 pieces of 1" stick
Cardamom
- 3
Ghee
– 2 tbsp
Onion
(sliced lengthwise) – 2
Cashew
nuts and raisins - to garnish
Oil
– for frying
Salt
– to taste
1.
Heat ghee in a thick bottomed vessel.

Saute one onion slices well.
3.
Add water with cardamom and cinnamon stick and allow them to boil.
4.
Add rice and cover the pan with a lid, cook until the rice is done and all the
water is absorbed. Occasionally check the rice in between and stir to prevent
rice sticking to the bottom.
5.
Pour 2 tsp ghee in the cooked rice.
6.
Heat oil in a pan.
7.
Add onion and fry till golden brown and set aside.
8.
Fry cashew nuts and raisins in the same pan.
9.
Add this to the rice.
Serve
with chicken curry
