Spinach – 2 cup (chopped)
Onion – 1 medium size (finely chopped)
Garlic pods – 2 (finely chopped)
Lime juice – 1 tsp
Cream – 2 tbsp
Butter – 1 tbsp
Vegetable stock – 2 cups
Salt & Pepper– to taste
1. Heat butter in a pan and sauté onion and garlic until soft.
2. Add spinach with little salt and sauté for 3 – 4 minutes.
3. Remove from heat and allow cooling.
4. Blend cooked spinach by adding ½ cup of water.
5. In a pan pour blended spinach, vegetable stock and bring them to boil.
6. Remove from heat and add salt, pepper, lime juice and cream.
Serve hot
