Vermicelli/ Semiya – 1 cup
Onion – 1 (finely chopped)
Carrot - 1 (chopped finely)
Potato – 1 small (peeled and chopped finely)
Green Peas - ¼ cup
Green chillies – 2 (finely chopped)
Roasted peanuts – 2 tbsp
Mustard seeds – ½ tsp
Cumin seeds – ¼ tsp
Urad daal - 1 tsp
Curry leaves – a few
Coriander leaves - for garnish
Oil – 1 tbsp
Salt – to taste
1. Fry vermicelli till it turns to golden brown and set aside.
2. Heat oil in a pan and add mustard seeds, cumin seeds and urad daal.
3. When mustard seeds pop up then add onion, green chillies and curry leaves and saute onion becomes transparent.
4. Then add vegetables and cook it becomes soft.
5. Add 1 cup water and salt and allow them to boil.
6. Then add the roasted vermicelli and stir continuously till all the water left.
7. Garnish with coriander leaves and roasted peanuts.
