Egg curry with coconut milk































Boiled eggs – 4
Onion – 2 (sliced)
Green chillies – 2 (sliced)
Ginger garlic paste – 1 tbsp
Coconut milk- 1 ½ cup
Red chilli powder – 1 tsp
Coriander powder – 2 tsp
Turmeric powder- ½ tsp
Garam masala powder – 1tsp
Curry leaves – a few
Mustard seeds – ½ tsp
Oil – 2 tbsp
Salt – to taste

1. Heat oil in a pan and splutter mustard seeds.
2. Add onion, green chillies and curry leaves and sauté well.
3. Then add ginger garlic paste and stir well.
4. Reduce the heat and add chilli powder, coriander powder, turmeric powder, garam masala and fry for few seconds.
5. Add coconut milk and salt and allow it to boil.
6. Add boiled egg and cook for 2 minutes.
Serve with Appam/ Chapathi/ Rice

Ladies finger-egg thoran / Vendakka-mutta thoran































Ladies finger / Vendakka – 15
Onion – 1
Green chili – 2
Grated coconut – ½ cup
Egg – 2
Turmeric powder – ½ tsp
Mustard seeds – ½ tsp
Curry leaves – 1 spring
Salt – to taste
Oil – 1 tbsp

1. Clean and cut ladies finger, onion and green chili into small pieces.
2. Heat oil in a pan and add mustard seeds.
3. When its splutter add lady finger, onion, green chili, curry leaves, grated coconut, turmeric powder, salt and mix well.
4. Cover and cook for 5 minutes.
5. Add the beaten egg to this and stir well.

6. Cook for another 5 minutes.

Egg stew



























Boiled egg – 2
Onion – 1 (sliced)
Ginger & garlic – 2 tsp (finely chopped)
Carrot, beans, potato – ½ - 1 cup (cut into cubes)
Green chilli – 3
Thick coconut milk – 1 cup
Whole garam masala – 1 tsp
Mustard seeds – ½ tsp
Curry leaves – a few
Oil – 2 tbsp
Salt – to taste

1. Heat oil in a pan and add the mustard seeds. When it splutters add the whole garam masala.
2. Then add onion, ginger, garlic and sauté till onion becomes golden brown colour.
3. Add chopped vegetables, curry leaves, green chilli and cook with enough water.
4. Add coconut milk and sliced egg. Cover and cook 5 minutes in low flame.
Serve with appam, puttu, roti, rice…….
